Ingredients
Shrimp (peeled, deveined, and with tails on) 1 Pound
Bread Crumbs 1 1/2 Cups
Eggs 2 Large
Salt 1/2 Teaspoon
Black Pepper 1/2 Teaspoon
Flour 1 Cup
Vegetable Oil 2 Inches Deep
Recipe
Beat the 2 eggs in a bowl until foamy.
In a second bowl, mix salt, pepper, and flour.
Working in batches, dredge a couple of shrimp in flour and shake them to get rid of excess flour.
Immerse the shrimp in the eggs.
Immerse the egg-covered shrimp into the breadcrumbs. Ensure both are well-coated.
Pour about 2 inches of oil into a heavy pan or pot.
Heat the oil to 350°F and, still working in batches, immerse a couple of shrimp into the oil and cook for 1 minute. Remember overcooking will spoil the dish.
Using a pair of tongs, carefully remove the shrimp from the hot oil to a paper towel.
Serve with the sauce of your choice.
